Carrot Cake Balls

Yields about 2 dozen
Ingredients 1 C. Chopped Carrots 1/2 C nuts (pecans, almonds, walnuts) 1/2 C coconut flakes-unsweetened 1 C oats 1/2 C dates-soaked to soften 1/4 C nut butter (peanut, almond or cashew) 1 t. ground cinnamon OPTIONAL DIPPING SAUCE 2 TBSP - soft cream cheese 1 TBSP- maple syrup or honey
Directions Chop carrots in food processor and transfer to a bowl. Process nuts and coconut in food processor to a sandy texture. Add oats and dates and process again to a sandy texture. Add nut butter, cinnamon and carrots and blend until dough comes together. (It will be crumbly). Shape dough into balls using a teaspoon. Store in refrigerator in airtight container for up to two weeks. For dipping sauce Mix cream cheese with maple syrup or honey.
