Vegan Zucchini Brownies


Prep Time 10 minutes

Prep Notes shred zucchini in food processor or with a hand grater. Spray 8 x 8 or 9 x 9 baking dish with cooking spray Preheat oven to 360 degrees.

Cooking Time 30-40 minutes

Yields 1 8x8 or 9x9 pan

Ingredients DRY INGREDIENTS: 3/4 C. granulated sweetner 1 1/2 C. Rolled oats ground into flour (or oat flour) 1/2 C chocolate chips (vegan if needed0 1/2 C + 1 TBSP unsweetened cocoa powder 1 tsp baking powder 1/4 tsp baking soda 1/3 tsp salt 1 tsp instant coffee powder-optional WET INGREDIENTS: 1 1/2 C shredded zucchini 1/2 C nut butter 1/4 C plant-based milk 1 tsp vanilla extract

Directions Put dry ingredients into food processor and blend until a flour-type consistency. Add wet ingredients and blend until well combined. Pour batter into pan and top with chocolate chips and nuts. Bake at 360 degrees for 30-40 minutes until toothpick comes out clean. Store in refrigerator or freeze. Enjoy!!
