Yields 4 3/4 Cup Servings
3 C. chopped partially peeled cucumber
1 ripe avocado
1 C vegan plain yogurt
1/4 C chopped fresh dill
2 TBSP fresh lemon juice
1/2 t salt
1/4 t pepper
extra virgin olive oil and julienne radish for garnish
Combine cucumber, avocado, yogurt, dill, lemon juice salt and pepper in a blender. Blend on high speed until smooth. Refrigerate until chilled.
Serve soup drizzled with oil and garnish with radish, dill sprigs and pepper.
Try different herb combinations like mint or cilantro for a refreshing twist. Cilantro and lime would be delicious:)
